Enterohemorrhagic Escherichia coli (EHEC) is a subset of E. coli strains that can cause severe and sometimes life-threatening intestinal infections. EHEC is responsible for outbreaks of foodborne illness and is often associated with contaminated ground beef, raw milk, and fresh produce. The hallmark of EHEC infections is the production of Shiga toxins, which can lead to severe symptoms, including bloody diarrhea and kidney damage.
